The gorgeous @elleroseschoe made my breakfast loaf.. She added chia seeds, raspberries and coconut to the mix.. 250g uncontaminated oats or quinoa flakes
100g of vanilla protein powder of choice. (If don’t want to use a protein powder use 100g almond meal, vanilla essence and an apple)
2 organic eggs
50-100mls of coconut water
Blend all together, pour into a loaf tin.
Mix in 200g blueberries or 2 bananas or mixed berries or any fruit you wish
Bake on 180degrees for 35-40min.
Top with your favourite superfoods – chia seeds, pepitas, nuts, coconut OPTIONAL
Serves 5. Can freeze.
