Peanut Butter + Maple Cookies

Peanut Butter + Maple Cookies

I made these cookies for breakfast as I wanted to have a bit of a change from the usual smoothies and porridge. The cookies are completely egg and dairy free. I got them out the oven and within literally 30 minutes, the tribe and I ate them all. None left haha! I guess they were a winner. They were chewy on the outside and soft on the inside, delicious!

Favourite hot drink?
mmm this is tricky because I don’t really drink many hot drinks, but in Winter every now and again I sip on tea! Last winter my fave was a Green Tea & Pomegranate tea J

Can you tell me who the REAL Lucia is?
The real Lucia is a true lover of life. I consider myself to have great inner strength, I’m truly happy, I can be super stubbourn, totally sarcastic and a perfectionist (which are both for strength and weakness). I can be super impatient in some situations and I can also be short tempered at certain people that i actually love to pieces *coughs* (Thiago). I surround myself with those that support, uplift, encourage and love me. I don’t have space for negative and toxic people in my life. If I come across any, I remove them or I remove myself. I am immensely grateful for my place here on earth, for my family, friends, for the freedom I have, the opportunities available to me and for the beauty that each day presents. I am spiritual, intuitive and I am very sensitive to other people’s energies. I consider myself very in tune ~ i see through bullshit and fake personas. I crave genuine. I do love learning about crystals, giving oracle card readings, optimistic people and all things nature. I love being creative and being by the ocean I am in my element. I get so happy and calm when I’m at the beach that it makes me emotional simply thinking about it. I love people. Especially helping people. (This doesn’t mean I want to be friends with everyone or love everyone). I find a lot of people confide in me and come to me for advice. Perhaps it’s because I have an open heart and an open mind, so I don’t judge them or their story/situation?

I believe self love encompasses many aspects of YOU. It’s not just about the physical body. It is SOOOO much more than that. SO much more! I truly do love who I am. I never question myself as a person, I’m very confident in who I am. I am however insecure in my physical appearance and it’s an aspect of self love I have been working on for a very very long time.
As a friend I am loyal, honest and reliable. I am “the” friend that you can make a 2:00 am drunken call to and I’ll be there! haha. I actually do not mind! (although haven’t done this with a baby yet, so perhaps times have changed!) I love being there for my family and friends. I would do anything for them.
Rambling….sorry! #stoppingrighthere
You recently became a mumma to that handsome little man Luca, how are you coping with it all?
Ah man…he’s so darn cute right!? To be honest, life has definitely changed. I am extremely blessed. I absolutely love being a mama. So far he has been the happiest and most chilled little guy and doesn’t make too much of a fuss. (He has just started teething though! His two top teeth), so he has been a little grizzly here and there, but overall he’s a little champ. I am also extremely appreciative of my supportive and easily accessible network and my husband and my mum are my angels. My husband is very hands on! I think he was made to be a dad.  Offers to do the overnight feeds when he can and when he arrives home from work he is all hands on deck. He really enjoys being a dad, nothing is ever too much of an ask. Oh and my mum, ah bless her! She is anxious with excitement every day just to see her little Luca bear. She will usually stop by after work a few times a week and look after Luca for a few hours. When she arrives Luca is beside himself! It’s beautiful. We have been contemplating a sea change for years, but as you can see, having my family support so close, it’s hard to move right now.

Tell me about a day in the life of Lucia and Luca?
Well! Not any one day is the same, but let’s imagine we’re at home all day … sometimes I like not knowing every detail of my day ahead. I call myself a “free range” parent haha! ALTHOUGH in saying that, lately I have realised that being a mum perhaps I do need a routine in some areas of my life, because being a mum is also extremely unpredictable some days.

OK, so, Luca will usually wake up with the sunrise, so it’s around 5:30am at the moment. He greets me the widest grin and his limbs have a dance party and I quickly pick him up so that they’re don’t fly off his body! Luca will have his bottle, I will have my lemon water and then we go for a walk (now that I am back into my postpartum fitness!). Luca will usually sleep for most of the walk.

When we arrive home I will eat my breakfast and Luca will usually wake up just as I’m finishing up. Then we play on the mat/play gym. Have chats and giggles. Luca will have another bottle as he drinks every 3 hours. Then he will have his morning sleep 1-2 hours. During this time I tidy up, or edit videos or whatever I need to get done.
When he wakes up we play around a bit more, I continue doing what I need to do, sometimes I carry him in my baby carrier so that we can hang out together but I can still do my thing. Then he will have his lunch time nap.  When he wakes up it’s feed/play time and often we will sit by the pool or go for another walk. Then by 4pm my mum arrives (on some days) and takes care of him or goes for a walk with him and I do whatever I need to do, which sometimes is just chill or have a nap. Then she comes back around 5:30pm.

At about 6:00pm Luca will have a bath and then his bottle and he is usually in bed by 6:30pm. Then he wakes every 3-4 hours for a bottle, but he usually just drink in his cot, we burp him and he continues sleeping.

That’s an average staying at home kinda day! Usually our days are much busier than this!

What drove you to create your Instagram account @the_thriving_elephant?

@the_thriving_elephant was a name change I made in June 2015. It was initially @livinglovinginspiring because I couldn’t think of name that I had a connection with and those three words were what I was all about.  In June 2015 I founded my business name and now IG name The Thriving Elephant.

My health journey is what led me to social media. First and foremost I wanted to share my story on the taboo subject of ‘stillbirth’. My first pregnancy almost took my life and sadly took the life of my son, Leo. After this I began to research and I educated myself. I wanted TTP to be known and understood. This then led me to researching more about Hashimoto’s and my high ANA inflammation markers. I experimented with all forms of food, fitness and holistic healing. Two and a half years post, April 2014 I had decided to eliminate gluten, dairy and refined sugars from my lifestyle cold turkey ( I was already vegetarian). I became so interested in eating healthy and creating recipes that I wanted to share it on a creative platform with others to access. I wanted to show everyone that eating healthy could be easy, that it could be enjoyable and most of all if was still delicious!

Another very important aspect of my blog was to inspire people to keep strong. I wanted to encourage and support others that had been through tough times or were going through a hard time to never give up. Not everyone has a support network like I had and I wanted to show them that there was still a fulfilling and happy life to be lived after the sadness and the pain. Ultimately, “Life is what YOU make of it”. I want people to know that it does get better and life is beautiful.

What do you think attracts women to your site besides your adorable little man updates?
From what the people tell me, definitely the food + positive vibes! I was exclusively a food + inspo blog before I had Luca. I would share daily recipes and have people all over the world recreate them. Since shifting my blog and my focus to include aspects of motherhood as well, I have lost thousands of my foodie followers, but I am now gaining those who enjoy my blog for what it is. It will take a while to find the balance and direction, but I think as we grow personally, our blogs change with us, and so do our followers, but the true supporters and friends we make along the way will be there no matter what our content may be.

What is something you love to practice daily?
I practice gratitude every single day. I have for a few years now. It isn’t at a certain time of day, although it used to be when I woke up and before I went to bed. Whereas now, I find myself doing it at any time of day.

I also meditate. I used to struggle with meditation but now I really enjoy it. I am currently restarting a 40 day meditation challenge which has got me all excited! Meditation is life changing.

I know first hand how busy it can be being a mumma, how do you find the time to move your body?
I’m not currently working, so my sole responsibility is Luca. I have only just gotten back into the swing of things in the past 3 weeks. This week is my fourth week. I have been enjoying morning walks and if I can’t make the morning walk I make it up during the day at another time. I also try and use the gym twice a week. I hope to amp up the gym sessions soon to 3 times a week. I am also trying out new classes in the coming weeks. Barre classes and my absolute favourite exercise ever, reformer pilates. They’re not very cheap so I take advantage of free passes when I can. Slowly but surely I am getting back into it!

Favourite activewear?
I have always been a Lorna Jane fan! She’s a Brisbane local entrepreneur SO INSPIRING! Everything always fits me (I’ve got a Kim K booty and small waist haha), I always feel motivated and good in her clothing! I haven’t really got much else in my “Activewear Wardrobe”.

Where do you find inspiration for your recipes?
When I first started my healthy eating journey I was already educated on foods that I should be fuelling and nourishing my body with, but I really wanted to try new things and get inspired by other ways of creating food (especially sweets hehe) so I decided to join instagram. I was inspired by some beautiful instagram accounts and their delicious feeds, but it didn’t take long before I started developing my own recipes and style. I have always loved a challenge. I have never owned a recipe book because I feel it blocks my creativity. Although… I really want to start collecting some because as I write my own book at the moment, I know how much love, time, heart and soul goes into writing a book. It’s not just any book, it’s a piece of each persons journey. There is something really special about that. Perhaps I should start a recipe book collection and begin by purchasing recipe books my friends have puiblished!

What advice would you give to other people out there wanting to start a blog/business?
Just do it. Take the leap of faith. Take small steps each day to get closer to your dream. What could you do today, to get one step closer to the dream? Perhaps it’s getting a pen and putting your thoughts on paper! Perhaps it’s creating a business/blog name? Maybe it’s organising your ABN (make sure its not taken), or organising your blog name (make sure its not taken). Always check if your name is available before you start anything! Try not to tell too many people your ideas if it’s a business (I have had a friend use my idea and run with it! I was shattered). Rely only on those you trust. Network and make connections with likeminded and genuine people. Most of all…. enjoy the process!

Be patient (something I have had to learn), amazing things don’t happen overnight. They usually happen with time, hard work, commitment and the recipe for success “consistency”.  Keep at it! The universe always has a plan for you in its own devine timing.

Chocolate or Sweets?
Chocolate! It’s so versatile, delicious and raw chocolate is pretty good too! Oh and it’s basically like eating your greens! Just check out this quote … (I’m sure you’ve all seen it before, but it’s gold!).
“Chocolate comes from cacao, which is a tree. That makes it a plant! Chocolate is salad! LOVE haha
What more from Lucia?

Voome – Aim for progress not perfection!

Sponsored by Voome

I believe the key to having a healthy relationship with food is nourishing your body with tasty foods that are good for you. You don’t need to starve yourself or deprive yourself. Instead, we all need to learn to eat to live, not live to eat.

We all have those days or weeks when our relationship with food can be a bit shaky and off. Our intentions start off good, we wake up with a goal to make healthy food choices and move our bodies, but then throughout the day we create excuses like “I’m too busy, I don’t have time with work, it’s easier to buy takeaway” etc. However, on these days food should not be the enemy! We need to learn to create a healthy relationship with our mind and the food we’re putting into our bodies. Learning to love your body will help you to understand the importance of feeding it the best fuel.

Self-love and life experience has made me to want to learn more about healthy foods and has given me a passion to help praise it to others. Knowledge is power; the more you learn about what you’re putting in your mouth, the more respect you gain for the healthy foods you eat and feed to your family.

I am a first time mum that has recently returned to work three days a week. Finding the time to move my body and eat nutritious foods is extremely important to me, but can be a challenge at times. I need to keep my energy levels up to keep up with my little man, continue with all the #mumlife housework, go to work and run a blog. My life can be extremely busy! I want my son and future children to learn good habits surrounding food and exercise. I believe that it’s my duty as a mother. I have to make time to create these healthy habits for myself so they too can follow and see these habits as a normal part of life. All the while showing them there needs to be a balance, because there’s more to life than just nutrition and exercise.

I heard about an online health & fitness tool called Voome, which ended up being a great solution to help me achieve my goals. After researching it, I found that it was designed by the same creators of the Michelle Bridges 12 week challenge. I am in love!! You will be too. It ticks all the boxes for me!

As I want to maintain my healthy lifestyle and continue on this journey for a lifetime, I believe it can help me achieve this. Voome is not just a quick fix. I love that you can access it online, anywhere and anytime! This is so convenient for me being a busy mumma, as I can workout when Cruz sleeps or early in the morning. It’s so handy, with quick and effective workouts between 10-30 minutes. Not only is it jam-packed with healthy recipes and workouts, you also receive weekly emails with extra tips and motivation to keep you inspired.

One of my favourite things about Voome is that they have created ready made meal plans. There are so many to choose from depending on your lifestyle and how you eat. The meal plans are great for time poor mummies, as they provide you with a bunch of nutritious recipes that can be downloaded straight into shopping lists! This is so handy for me as I love to be organised for the busy week ahead and it gives me more time for cuddles with Cruz. I am currently enjoying making the Apple Muesli for breakfast and the Chicken with Sweet Potato Wedges and Avocado Salad from one of the collections (without avo as I’m allergic). The muesli is so easy to prepare, I make it for Cruz and I the night before in a jar.

I am looking forward to the weeks ahead and seeing what my mind and body can achieve with Voome. I believe it will not only help me smash my goals of self love, maintaining healthy eating and exercising but also help me to find that healthy balance with other aspects of life.

Stay tuned as I will keep you posted on my progress!
