Peanut Butter Cookies 🍪


I am totally digging anything with Peanut Butter at the moment. Like literally obsessed. I may be eating it from the jar 🤔.
The kids and I made these a while back and you kept asking me to get my
🍑 together and give you the recipe 😂.


Ingredients 🍪

1 cup of flour (I used spelt but you can use what you wish)
1 cup oats, grounded
1 tsp. baking powder
1 pinch of salt
1/3 cup of peanut butter powder or 1/2 cup peanut butter. (I used @macr0mike powder)
1/4 cup coconut sugar
1/2 cup almond milk (or milk of choice)
1 egg or chia egg for vegan option
2 tbsp. maple syrup
1 tsp. vanilla extract
Toppings of choice to decorate. We loved vegan choc, sultanas or hemp seeds.

Method 🍪

  1. In a bowl mix all dry ingredients together. In a separate bowl mix all wet ingredients.
  2. Create a little hole in the middle of the dry ingredients and slowly combine until cookie dough like.
  3. Preheat oven to 180degrees.
  4. On a baking tray roll out 12 cookie balls and then flatten with a fork. Add the toppings.
  5. Bake for 20-25 minutes.
  6. Consume within 4 days. Store in air tight container.

    Notes – you can swap to cashew butter, almond butter etc. Any will work. You will need a little more milk though as these butters aren’t as oily when combining the mixture.

Vegan Blueberry Pie.

Blueberry Pie 🥧

I was #gifted a few punnets of @australianblueberries and to be honest I was pumped as we eat a punnet every few days in our house. With smoothies, snack boxes, homemade jam and did I mention snack boxes 🤪🙈. I wanted to make up something different and get creative in the kitchen after we went to the shops. I’m craving 🤰 a blueberry pie with coyo yogurt so I thought why not make one up. It was so easy to make.

Ingredients 🥧


2 sheets of short crust pastry(we use a vegan one)
1 large punnet of @australianblueberries
1 small red apple, grated
1 tsp cinnamon
1/2 tsp nutmeg
2 drops of green mandarin essential oil (could totally squeeze a lemon though)
2/3 cup of warm filtered water
3 tbsp. maple syrup

Method 🥧

  1. Preheat the oven to 180degrees.
  2. Line a small Pyrex pie dish.
  3. Throw in the blueberries and the grated apple into the centre.
  4. In a bowl mix, warm water, maple, spices and citrus.
  5. Pour over the apple and blueberry mix.
  6. Pop some of the remaining pastry on top however you wish to style.
  7. Bake in oven for 45minutes on 180 degrees. Then turn down to 100 degrees and bake a further 15minutes.
    .
    Serve warm or cold. We are teaming this with coyo, but you could totally serve it up with ice cream, custard, cream. Your choice. ✌🏼

Blueberry + Raspberry Little Bites

We have been making these twice a week of late. All my little ones love to eat them, plus I don’t mind a cheeky one for afternoon tea either. It’s so handy to have bite size foods to grab straight from the fridge that are made from wholesome foods with no added nasties!

They are really simple to create and take 5minutes prep time and then 20minutes to bake.The is perfect for your older bub or toddler for breakie, morning tea or an afternoon snack.Here is the recipe! Bread Pudding Christmas Cake

 

Bread Pudding Christmas Cake

This recipe was inspired by the taste of my Nanny Pat’s fruit cake and my Dad’s famous Bread Pudding. Both treats I enjoyed on special occasions like Christmas as a child.

Ingredients

  • 1 Cup Dates, soaked in ½ Cup Boiling Water
  • ¼ Cup Sultanas
  • 1 Teaspoon Cinnamon or 1 Drop Cinnamon Bark Essential Oil
  • ¼ Teaspoon of Mix Spice
  • ¼ Teaspoon of Nutmeg
  • 1 Teaspoon Vanilla Bean Paste
  • 2 Slices Rye Bread, crustless and soaked in ½ Cup Almond Milk (overnight)
  • 1 Tablespoon of Olive Oil or Coconut Oil
  • 2 Chia Eggs (to make vegan) or 1 Organic Egg
  • 2/3 Cup Spelt Flour
  • Squeeze of ½ an Orange
  • 2/3 Cup Oats
  • ½ Cup Mixed Berries (I used Raspberries, Blueberries and Black Berries)
  • 1 Serve 180 Nutrition Coconut Superfood Blend (optional)
  • 2 Tablespoons Maple Syrup
  • 1/3 Cup Mixed Raw Nuts

 

Method

  1. Preheat your oven to 180 degrees.
  2. Prepare a round cake tin (20cms round) and line if you pan is non-stick. I used coconut oil to line mine.
  3. In the high speed blender (I use the Vitamix) mix the soaked rye in the milk, flour, dates, in hot water, maple, essential oil or and spices, egg, vanilla, protein (if using) orange and oil.
  4. Pour mixture into a large mixing bowl. Fold through the nuts and remaining fruit.
  5. Spoon the batter into the baking tin. You will need to bake for 45minute. Turn heat down to 150 degrees and cook for another 20minutes. Check with a fork to see to make sure it is cooked the whole way through.
  6. Allow the cake to cool a little, then place on cooling rack. Once completely cooled place the cake in an airtight container and store in fridge. Consume within 7 days.
  7. Decorate on your favourite cake stand, top with extra fruit and serve with your favourite cold dessert. We love Pana Chocolate Ice Cream.

 

NOTE – You can mix in 2 nips of rum or brandy if you wish for a Christmas treat.

Alice In Pregnancyland #32weeks-38weeks

Pregnancy Emotions. Pregnancy Eating. Pregnancy Exercise. Pregnancy Style.

I actually cannot believe I am typing the last blog of the Alice In Pregnancyland series. (for now haha) I remember chatting To Tahlia about collaborating with me for the #bumpstyle shoots and now here we are at 37 nearly 38 weeks finishing off the bump series. I have really loved building a friendship with Tahlia from @wyldefolkstudio_ while we did the photoshoots she is such a kind hearted person. I now have a friendship for life with her. Not to mention how blessed I was to collaborate with so many gorgeous labels and maternity brands. throughout the 9 months. A huge thank you to everyone that followed the series and continued to send through such beautiful feedback. Big Love to you all.


Pregnancy Emotions

The last few weeks I have been on a emotional roller coaster. I have been so excited to meet the little one, I have had mum guilt with my one on one time with Cruzie, I have cried happy tears and I have cried god knows what tears. To me having a good cry really does help me just let it all out, breathe and then let it go. All these new emotions feel like it’s my heart is expanding and I am ready to meet our new little one now.

I finished up work at 36 weeks. Best decision as I was going to work to 37 weeks, the heaviness of nursing and being on my feet got to me a little. So I am so glad to be on maternity leave. It feels so different not having to go to work again. 

I have been making the most of my time with Cruzie too. I have been taking him to singing and reading at the library, reading and extra snuggles at night time, park hangs and babycino dates. I am loving being off work with him again. 

Everyone has been asking how Cruzie has been? Does he know? I think he knows a change is coming. He won’t let anyone rub my belly but David, he pushes their hand away or pulls my top down. We brought him a little dolly and he has been kissing it, changing its nappy, pushing it around in a pram. It’s so cute to watch. I think he will be a great big brother. 

I keep telling myself that I need to slow down as my body is tired, but its true “nesting” is a real thing. I keep thinking of new things to do and clean. I forget to rest and I am on the go all day. Then I have the worse braxton hicks and back ache in the evening. So I should listen to all the advice and just put my feet up. Haha easier said than done though. Plus entertaining my little man. He sleeps well in the afternoon so I should just lay down then and watch some Offspring on tv. Maybe tomorrow? haha.

I went and seen my midwife for a 36 week scan and check up. The cheeky bubbas legs are sitting frog legged but the head is right down there. I keep thinking in my head that the baby will be here early because Cruz came early but I shouldn’t get my hopes up. I discussed my birth plan and what I wanted. My birth plan is to have a natural birth, hopefully not be on the monitor like last time, have a bath or hot shower, use essential oils and just have David in there. David is my rock and he really did help me through the breathing techniques last time. I do still feel anxious about the birth experience and labour but I am just trying not to think about it, what will be will be.

Pregnancy Eating.

With eating I have been a bit all over the place.

I wake up so hungry and have to eat before I go for a walk. For breakfast I normally have smoothies or protein pancakes. Thats its the I just swap it up between the two.

Then for snacks I have almonds, nuts, apple or a bliss ball. Sipping on so much raspberry leaf tea to ha.

Lunch is lots of greens and a source of protein or a chia sourdough with cheese, figs and cucumber sandwich or the same combo on rice cakes.

I am obsessed with Bolognese at the moment with zoodles (zucchini pasta), I am addicted love it. I also love white fish or salmon with greens for dinner, I have gone off all brown rice and sweet potato probably because my belly already fills so fall at night.

Cravings – organic milk chocolate from Flannerys Health Shop … YUM!!!!

Pregnancy Exercise

Walking 30-45minutes around the block (filled with hills) but very slowly as I get pelvic pressure. I put my podcast on and enjoy the metime I love it. Makes me feel better. I love doing about 20-40 push ups daily on the kitchen bench and 20 squats on the shower too. About 3 times a week I use my little 2kg weights and do a little arm workout too. If I have having an exhausting day I just don’t exercise at all. Maybe just do a stretch. The last week I have really slowed down, but thats okay, my body needs the rest.

Pregnancy Style

So besides loose boho styles and a few tight comfortable maternity dresses I have been living in maternity leggings and a jumper. Argh so comfy. I do love dressing up the bump, but I feel my wardrobe has become very limited and don’t really want to add to it till the baby is here. 

For this #bumpstye shoot I wore a dress I purchased for a hens day a few months back. Its called the FAWN WRAP DRESS and I brought it from the @theselfstyler online. Guess what they just restocked it too. You can buy it HERE. Its perfect to take you through your pregnancy journey and will be great for breastfeeding too. Its not actually a maternity dress but it should be its so comfortable.

Tahlia and I decided for the last bump photoshoot we would find a beautiful spot with long grass (secret location) and invite David and Cruz to come along for some family photos. We had a lovely afternoon watching the sunset and Tahlia came with her family too, so nice. I hope you all enjoy the photos.

I first met Bec at White Bohemian when I was working in store. She used to come in store as a customer and one day we really got chatting about her passion and that is naturopathy, yoga and meditation. This naturally beautiful woman glowed health to me, and I was always so interested to know more about her lifestyle. 

When Bec decided to start her Instagram I was so pleased as she shares so many useful holistic health and wellbeing tips, her knowledge about yoga and meditation and some delicious nourishing recipes with her followers.

Feeling Like a Yummy Mummy in my Lingerie.

When Cruz was 6 months I decided I would do a little #selflovephotoshoot when I was 10months postpartum. 
So now Cruz is 10 months, here they are. During the last 4 months I have been working on a little self love project with myself. To teach myself to be proud of my body and its achievements. I no longer want to waste my breath on self hate chat in the mirror. Instead I will preach love. The rules of the photoshoot was to no make up, just a little lipstick, just a home camera  job (nothing fancy), no photoshop or filters. I have nourished my body with good foods, moved my body in some way everyday since the birth and rest when I need too. So hey why not be super proud of my body and my son.

I contacted Robyn from @yummy_mummy_lingerie to be apart of the shoot as I absolutely love her underwear she sells. It’s comfortable, its fits my new mum shape and I feel good in it. She has been wonderful and so supportive of my mum journey. I think its only fair that I share some love in return and tell you all about the woman behind  Yummy Mummy Lingerie?

Why did you decide to start Yummy Mummy Lingerie?

Hubby and I decided to become foster carers in 2013 so I gave up my career in health to become a full time mum, but knew I’d need to find a family friendly business to work in as well. We had tried for many years to have a family and had only been blessed with one son, who is the light of our lives. We decided that we would like to grow our family and we knew that there were so many little ones needing a loving home so we decided to embark on the fostering journey.

It was a serious commitment to make, as caring for a baby would mean that one of us would need to give up our current career and be home to care for bub and allow for the vital bonding to occur. However, once bub settled in with our family and I had time to think about work again, I starting looking for opportunities. The first day I looked for an online businesses to buy I found what I was looking for in Yummy Mummy Lingerie.

It was meant to be! I just loved the idea of offering beautiful and practical maternity lingerie to new mums and mums-to-be in a super convenient way and helping make their pregnancy and breastfeeding experience as comfortable as possible. We were lucky enough to be able to purchase the business and now I happily work from home doing something I love, whilst being able to be there for my boys.

What is the most common question you get asked  by women when buying underwear?

It’s more of a statement than a question but the most common thing I hear from my customers is– “I am not sure what size I am”. This is not surprising is it as our bodies are undergoing the most amazing transformation J  So don’t be worried if you don’t know – you are not alone J My response is to ask a few simple questions so that we can work out together what size would be best for them now and some styles that would suit that particular mums needs.

Roshini McCartin AKA @rosh_tulaliving #showtherealyou

She is a yoga mentor and a teacher, a wife, an ocean lover, a writer and so so much more. This superwoman is constantly sharing ( I am learning so much from her) about how she honestly deals with balance in her every day busy lifestyle. I came across Rosh, when I accidentally stubbled on a blog article she wrote on Choosing to see the beauty within. It was like she was writing this post to me. It was exactly what I needed to read on a day I was feeling like shit. I urge you all to check it out its an amazing self loving article. Her writing is so powerful that she draws you in to want to read more. Since having our bubbas, we have both connected online and built a virtual friendship. Hopefully that changes to an in to  face to face catch up soon.

Tell us a little more about your Instagram? Why did you start it?
My Instagram is @rosh_tulalliving. Tula Living is my blog, website and brand name (eventually). Tula means balance in Sanskrit. The reason I started my Instagram was initially to be honest because everyone else was, I used to try and mimic and copy others because I actually had no idea what I was doing or what I wanted this account for. Now it’s a whole different ball game, I keep my Instagram as fun, light-hearted, real and inspiring as possible. There are so many FAKE highlight reels on any social media platforms that I think it’s really important to stay real. I love to share openly about life, yoga and motherhood. I want to inspire others but also not sugar coat anything especially to do with motherhood stuff, because as you know Alice it’s a constant roller coaster ride navigating highs, lows, good days and some friggin incredibly challenging days and nights.
You are a new mum. Your little man is just so adorable. Can you please tell us a little about your current #mumlife status?
So my little boy is 7.5 months (can’t believe I am actually writing that). Wow, where has the time gone? I actually LOVE being a mum I had no idea how much more love and joy enters your life once becoming a parent. It is seriously such a gift (as challenging as it can be). I feel I have been offered an opportunity to dive deeper into knowing myself, I feel I have been offered an opportunity to rebirth and see the world with fresh eyes. Things that used to drive me crazy or I’d worry about are much less relevant now.
I”m a working mum, I teach yoga about 7-8 classes a week and am very fortunate that Tim my fiancé has flexible hours through his massage clinic so he can mind Louis whilst I get to go and do what I love.
This, of course, has its hurdles and battles, but so far it’s working pretty good and I LOVE that Tim gets to see our side of it and I love that he gets precious bonding time with Louis and I also get filled up and get to offer and share in a whole other realm. I also get to interact with adults which are not mums as well which is so refreshing and nice. (ha ha).
My little Cruz is struggling to sleep through the night.  Does your little one sleep well? Do you have a sleep routine?
I have to say sleep is something I have focused on since day 1, and really trying to set familiar patterns each day, so Louis can start to learn what is coming next. He is in a semi-routine which of course as all you mums reading know changes with whatever they might offer you and be going through on the day (little dictators ha ha). He is pretty good, he still stirs once a night for a resettle then again for a feed, so this magic sleeping through the night you hear of has not happened YET. I’ll be shouting out to the world when it does and how I got 7-8 hours solid sleep, ( I can’t even remember that feeling)
Do you ever have time for a date night? If so what do you get up too? 
Date nights are a bit hard for us for 2 reasons, we have no family support in Sydney and secondly the one night we did go out I was soooooo tired I asked for the bill at 8.30pm (oh dear).
So now a friend of mine hopefully monthly take Louis for his morning walk and we go our for breakfast and get to chat awake and alert and suits us both much better. I’m sure the night dates will come back again one day, but for now, this suits us perfectly.
Tell us more about your passion for yoga? How long have you been practising? 
Oh, my passion for yoga has been an on-off love affair for well over 10 years now. I fell madly in love with it in Ireland when I was living there as it was so bloody cold I needed to move my body in some way to get some heat into it and so I got addicted to Bikram. The more I practised the better I start to feel on so many levels and now seriously it’s like my drug my medicine. My days of long practices at home or studios are not quite as frequent since becoming a Mum, but the opportunity to practice it and integrate it off the mat is. Which is truly such a gift and huge passion and drive of mine. I’m really learning so much more about myself and the beautiful benefits of this gorgeous practice this way. Which brings me to answer your question below..
Favourite quote? 
Ohhh this is hard as I have quite a few favourite quotes. But in relation to yoga, I LOVE these 2 quotes
“don’t practice yoga to get better at yoga, practice yoga to get better at living”
and
“Yoga is an internal practice the rest is just circus”
What inspires you? 
LIFE itself. How precious and short it is and the opportunity each that we have a clean slate to learn to grow, to have fun, to laugh, to share, to make mistakes, to love and to right now be the best version of myself and the best fiancé and mum I can be.
 Favourite active wear?
lululemon hands down. The quality of the product is amazing and you can seriously wear their products for years, its defiantly worth the investment. My other 2 brands I LOVE for yoga tights are liquido and dharma bums 
What’s your favourite go-to healthy recipe?
Hmm one of my faves is sweet potato chips cooked in coconut oil and dusted with coconut flour and a new one more sweet wise is chocolate/banana muffins from Jessica Sepel’s blog.

Recipe is as followed..

Mix 3 tbsp @h2coco organic oil, 2 tbsp peanut butter, 1 tsp organic honey. Melt.
Mix in 1 serving of vanilla protein ( I used @nutraorganics vanilla)
Add your mix ins – 2 tbsp of your favourite granola or mixed nuts or even just berries.

Allow to freeze for 15minutes.
