Vegan Blueberry Pie.

Blueberry Pie 🥧

I was #gifted a few punnets of @australianblueberries and to be honest I was pumped as we eat a punnet every few days in our house. With smoothies, snack boxes, homemade jam and did I mention snack boxes 🤪🙈. I wanted to make up something different and get creative in the kitchen after we went to the shops. I’m craving 🤰 a blueberry pie with coyo yogurt so I thought why not make one up. It was so easy to make.

Ingredients 🥧


2 sheets of short crust pastry(we use a vegan one)
1 large punnet of @australianblueberries
1 small red apple, grated
1 tsp cinnamon
1/2 tsp nutmeg
2 drops of green mandarin essential oil (could totally squeeze a lemon though)
2/3 cup of warm filtered water
3 tbsp. maple syrup

Method 🥧

  1. Preheat the oven to 180degrees.
  2. Line a small Pyrex pie dish.
  3. Throw in the blueberries and the grated apple into the centre.
  4. In a bowl mix, warm water, maple, spices and citrus.
  5. Pour over the apple and blueberry mix.
  6. Pop some of the remaining pastry on top however you wish to style.
  7. Bake in oven for 45minutes on 180 degrees. Then turn down to 100 degrees and bake a further 15minutes.

    Serve warm or cold. We are teaming this with coyo, but you could totally serve it up with ice cream, custard, cream. Your choice. ✌🏼

Bread Pudding Christmas Cake

This recipe was inspired by the taste of my Nanny Pat’s fruit cake and my Dad’s famous Bread Pudding. Both treats I enjoyed on special occasions like Christmas as a child.

Ingredients

  • 1 Cup Dates, soaked in ½ Cup Boiling Water
  • ¼ Cup Sultanas
  • 1 Teaspoon Cinnamon or 1 Drop Cinnamon Bark Essential Oil
  • ¼ Teaspoon of Mix Spice
  • ¼ Teaspoon of Nutmeg
  • 1 Teaspoon Vanilla Bean Paste
  • 2 Slices Rye Bread, crustless and soaked in ½ Cup Almond Milk (overnight)
  • 1 Tablespoon of Olive Oil or Coconut Oil
  • 2 Chia Eggs (to make vegan) or 1 Organic Egg
  • 2/3 Cup Spelt Flour
  • Squeeze of ½ an Orange
  • 2/3 Cup Oats
  • ½ Cup Mixed Berries (I used Raspberries, Blueberries and Black Berries)
  • 1 Serve 180 Nutrition Coconut Superfood Blend (optional)
  • 2 Tablespoons Maple Syrup
  • 1/3 Cup Mixed Raw Nuts

 

Method

  1. Preheat your oven to 180 degrees.
  2. Prepare a round cake tin (20cms round) and line if you pan is non-stick. I used coconut oil to line mine.
  3. In the high speed blender (I use the Vitamix) mix the soaked rye in the milk, flour, dates, in hot water, maple, essential oil or and spices, egg, vanilla, protein (if using) orange and oil.
  4. Pour mixture into a large mixing bowl. Fold through the nuts and remaining fruit.
  5. Spoon the batter into the baking tin. You will need to bake for 45minute. Turn heat down to 150 degrees and cook for another 20minutes. Check with a fork to see to make sure it is cooked the whole way through.
  6. Allow the cake to cool a little, then place on cooling rack. Once completely cooled place the cake in an airtight container and store in fridge. Consume within 7 days.
  7. Decorate on your favourite cake stand, top with extra fruit and serve with your favourite cold dessert. We love Pana Chocolate Ice Cream.

 

NOTE – You can mix in 2 nips of rum or brandy if you wish for a Christmas treat.

I made these cookies for breakfast as I wanted to have a bit of a change from the usual smoothies and porridge. The cookies are completely egg and dairy free. I got them out the oven and within literally 30 minutes, the tribe and I ate them all. None left haha! I guess they were a winner. They were chewy on the outside and soft on the inside, delicious!

Packing my toddlers lunch box daily can be a bit of a challenge as Cruz (nearly 2) can like something one day and then change his mind the next and say his famous “no” to what I have on offer. So I like to mix up his lunchbox with a few different yummy goodies and options but also like to offer him some of the same foods daily even if he doesn’t eat them because tomorrow he may haha.

My top 5 must haves for new mummas Feat. Organic Mums & Bubs.

I have been lucky enough to write a blog for one of my favourite Australian organic maternity and baby shops – Organic Mums and Bubs. The store is filled with absolutely divine 100% certified organic, eco friendly and ethical products which are suitable for pregnant and nursing mummas and their new bundle of joys.

Expecting a new baby can be lots of fun. Preparing and buying things for yourself and your little ones arrival is all part of the excitement of this new journey. There are so many great products to choose from on the market but at times can be quite overwhelming when deciding what you and bub require. Organic Mums and Bubs is one of my favourite online stores that caters for a wide range of all your mumma and bubba requirements, which is why I am putting together a blog post sharing with you the 5 products I love most from this amazing company.

I know we get super excited about spoiling Bub, but my first few must haves are just for mumma.

Comfortable Nursing Lounge Wear

The first few days depending on how you birth you could be in hospital. Followed by spending a lot of time at home getting to know your newborn. During this time just wanted to live in comfortable clothing. Little Winter Rose is now five weeks old and I still like to be comfortable to lounge around at home. If you choose to breastfeed to you will want comfortable clothes that you can nurse your newborn in. I really think that wearing comfy, soft clothing helped me to feel relaxed and comfortable in my own home and when heading to the shops.

I wear my Grace Bamboo Maternity Top and Essential Bamboo Maternity Pants together all the time around the house. The clothes are so comfy I even sleep in them and I can do my post natal yoga practice in this outfit too. Because it doesn’t look to pj like I can also wear out to the shops too and still feel good. The material of both the top and the pants feels great on my skin too, made from a mixture of organic cotton, bamboo viscose and a little spandex for stretch. I highly recommend this duo and packing it in your hospital bag if you are planning to have a overnight stay in hospital.

So comfy around the waistline and I love that the pants have a string to pull in as your postpartum stomach goes down.

Reusable Bamboo Nursing Pads and Wipes

Not only are the Milk Maid Mumma Nursing Pads kinder to the environment, I found they are so much more kinder to my breasts too than the disposable ones. They are made from bamboo and feel luxe against the nipples especially when my little Winter Rose is cluster feeding and my nipples feel grazed. The sit well in the bra and don’t scrunch up like the disposable ones do as the day goes on. I love seeing all the pretty prints on my washing line too. All nursing pad bundles come with a wet bag too, to keep the breast pads safe in the washing machine. Great for storing them in your nappy bag too.

The Milk Maid Mumma Reusable Wipes are also a great alternative to your everyday baby wipes we carry in our nappy bags. I have also found these wipe cloths great as a burping cloth alternative too. The wipes also come with a cute wet bag to store the wipes in.

Of course baby clothing is part of my list for new mummas as it’s so fun buying outfits for your new bundle of joy. I personally find it more fun than buying for myself these days. When your newborn arrives into the world their skin can be very sensitive. It’s great to purchase some clothing that is gentle and kind to their babies skin.

A comfort toy or blanket for your baby

It is up to you as a parent if you choose to use this method. I believe that giving my babies a comfort toy or blanket has really helped them to settle them to sleep no matter where they are put down to rest. A little tip though is to have a few comforters on the go. I always have one in the cot, one in the pram and one in the car. That way if one is misplaced there is always back up available.

Organic Skincare for Mother and Baby

As a mum I really want the best for my babies. I am amazed that so many baby skin care products are filled with nasty harmful chemicals and an ingredients list that goes on forever with words I cannot even say. I am a registered nurse and when studying anatomy and physiology I learnt that the skin is the largest organ in the body. It absorbs want we put on it so quickly into our bodies. Our new babies skin is so precious so especially in the little ones early days I think its important to be aware of what I use on their skin. So I keep my babies and my own skin products to a minimal or organic.

I love Aromababy Barrier Nappy Rash Cream Balm I have used this since Cruz was a newborn its such a great product. It also doubles as a great lip balm haha.

Activated Charcoal to Whiten the Teeth?

Being a registered nurse, I have seen charcoal being used in a very different way to whitening ones teeth. I have seen Health Professionals use it to reduce the effects of food poisoning, to cure hangovers, to treat poison victims and I have also seen it used on massive open wounds to reduce the smell. 
About a month ago, I walked into a cafe and came across Charcoal powder to take orally. As I do, I instantly googled the product and seen numerous benefits from taking the product. It draws toxins from your body and if used correctly can be used to detox the body. So I thought why not give it a a go? I bought it. I feel amazing. But I’m not here to review that type of charcoal that I bought. I’m going to share with you about the teeth whitening. 

When researching and gaining more knowledge on charcoal, I came across Eboniivory. An activated coconut charcoal teeth whitening product that was new on the market. During my research, I read information that you can use charcoal to whiten the teeth. I had tried once with my other product I had purchased, which was straight charcoal and it was so gritty and tasted foul. Eboniivory had created an activated charcoal that was specific for brushing your teeth. With the addition of organic orange, peppermint and Australian lemon myrtle oils, it was more pleasant to use and it wasn’t as gritty on the mouth. My mouth felt clean and fresh after every use. 


EBONiiVORY teeth whitening kit is 39.95 comes with an 80g bag of activated charcoal and a bamboo eco friendly toothbrush (which I might add is super gentle on the gums).


The product is 100% natural, vegan, animal friendly, handmade, raw and organic.

So I have been using the product once a day for 7 days, and to tell you the truth, I’m actually thinking of replacing my toothpaste all together with the product. My teeth feel so clean after every use and my whole mouth feels so fresh too. My teeth are looking super white. People have always commented that my teeth have always been white, but due to my new #mumlife situation my coffee addiction hasn’t been as friendly on my pearly whites. 


My teeth are looking very bright and white, but my white bathroom has definitely needed a clean more often. I’m not a careful person at the best of times when eating, so I have had a few spills. The packet includes instructions on how to keep your bathroom clean while using the product, but I decided to live life on the edge and not read the instructions until day 3 as I was too excited to hook into the product hahaha. Learnt the hard way. Positive note, it did make me clean my bathroom more often. 


Top was 7 days ago and bottom is today. I think they appear whiter. It’s so hard to get photos of your teeth haha. 

So this product is a win win for me. I highly recommend giving it a go.

Recipe is as followed..

Mix 3 tbsp @h2coco organic oil, 2 tbsp peanut butter, 1 tsp organic honey. Melt.
Mix in 1 serving of vanilla protein ( I used @nutraorganics vanilla)
Add your mix ins – 2 tbsp of your favourite granola or mixed nuts or even just berries.

Allow to freeze for 15minutes.
